Ingredients
- 250g strawberries, hulled
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ cup dried apricots1
- ½ cups rolled oats
- 1 cup shredded coconut
- ¼ cup white chia seeds
Method
1. Line a small, deep rectangular baking tray with baking paper.
2. Place strawberries, vanilla, cinnamon and dried apricots in a blender and pulse until smooth.
3. Transfer mixture to a large bowl and add rolled oats, ¾ cup shredded coconut and chia seeds and stir to combine.
4. Pour mixture into prepared tray and press down firmly. Press in remaining shredded coconut.
5. Freeze for 1 hour or until firm. Using a sharp knife, cut block into 12 equal portions. Store in the fridge until ready to serve.
